Will her eye's stay odd? I read that pure white blue eyed persians are normally deaf, is that true?

her eyes will stay odd.
No blue eyed persians are not deaf but it depends on how they were bred.
Problem with breeding white is to get 100% chance of white babies you have to put white to white and heres where the problems start.You stand a much higher chance of producing deaf and other defects doing this.
However my rule is i only ever use one white parent,you only stand a 50% chance of getting white kittens.However white is a dominante colour and most of my kittens have been white.Ive only ever had 2 Blue and 1 Cream from white parent.Doing this i stand of producing a fully hearing kitten,problem is theres a few who want 100% so they do white to white.
Ive had Blue eyed babies and not one has ever been deaf.And i now have my odd eyed which is my first ever and her hearing is fine

The other thing that I read which surprised me, was the siamese was used originally to produce colour point persians...
I do love persians, but the coat care put me off a bit, Merlin has a very dense coat and I can brush him everyday and still loads of fur comes out...

Yes siamese were used for the breeding to get colourpoint. Persians have been used in other breeds to add point to them to.The most common colour for Persians were Blue.Its now the one colour you dont see so many,everyones (including me) are into Bi-colour ,colourpoints etc

waiting for Saffy to come in season(my avatar is her).Cant wait to see what she has as it will be an unknown quantity.She will be going to my Ozzy whos Black/White.Were starting a new breeding programme which isnt recognised here in the uk.My intention is to breed an Odd eyed Bi-colour but this will take a few years.I like these very exciting
