Ok Chef Emma reporting back.

The chicken turned out very well, very very succulent, I would however once it starts smoking turn it down so it is on a gentle heat, as our chicken was quite heavy smoked. I would definitely cook this again.

DM I think fish or game would be very nice smoked, perhaps even pork??

I was a (fish-eating) veggie for about 15 years Fran. Then I resumed eating some organic local grown lamb and local or scottish beef and some game. Haven't got back into eating poultry or pork. Have you seen the film clip of the pig Ham, who can spell out his name with kiddies alphabet blocks?

Which could lead on to a long debate - with no 'correct answers' on why we eat cattle but not horses, sheep but not goats, ducks but not thrushes etc. Don't think I'll go there; it's all about personal decisions, isn't it.
