Apple Glut!

If anyone has any good apple preserving recipes that would like to share, please post! Our neighbour has passed a bag of eating apples to us. They are definitely eaters, not cookers and are lovely and clean and white inside, have a decent flavour but not very strong, ie. not like a Cox or a Braeburn - not sure what the variety is tbh.

I am of course Googling and find several good American sites, but wondered if us Brits had any traditional recipes?

Make applesauce! Eating apples work for that, have done it; it's not only nice with roast pork, I use it like jam for toast or scones! Lucky you!
