Truthfully, I fix fu yung more often than an omelette. Scallions, bean sprouts ham (or chicken or shrimp) mushrooms. And a gravy with chicken broth soy sauce and corn starch. If you do your own sprouts they're much nicer than the tired ones at the market.

I adore mushrooms in anything!! In omelettes I also like onions and cheese.

I quite like Frittata too - especially with any left over cooked new potatoes and onions, mushrooms and cheese!

For some reason I don't care for potatoes in frittata. but will add some chilis!
