I am still on the look out for a sugar free recipe for preserves (they can't be called "jam"). There is a particular brand of French fruit preserve that uses natural fruit juice rather than sugar ..... I have found English recipes with sugar substitutes, but if anyone has a recipe with no sugar, I'd be delighted to try it out.
