Easy-peasy classy looking starter!


We had this in Stockholm. So easy and just gorgeous.

Per person
1 medium beetroot - cooked (buy the ready cooked (but not vinegar-ed) one's from the greengrocer/supermarket)
1 slice of goats cheese (Capricorn is a good one, as it's about the right diameter)

Place beetroot in ovenproof dish, place goats cheese on top, tiny splash of olive oil and bake.

We had it served on flat plates which had been drizzled with very thin diagonals of runny honey and then there was a dusting of very finely chopped pecan.

Yum.

Mmmm. I LOVE beetroot . . . however it is deeply unfashionable which is a shame. The only thing I would omit on that is the pecans

Give me a slab of rollmop herring in sour cream to add to that and I'll be uber-happy!!

Beetroot - yuk!!!! Reminds me of my mum's salads in the 70's and 80's!!! Awful.
