Mace (from nutmeg) is an orange peel-like substance that wonderfully flavours food, especially soups. Leek and potato soup is much enhanced by adding a blade of mace whilst cooking and removing before serving.

English mace is entirely different. I'll try and find something weblike about it!

Here is something about English Mace. Jekka McVicar is a well known and much respected herb supplier and grower here in England. I am hoping to buy her latest herb book with a birthday book token!
