I've just been informed that of the two couples we are having for dinner next weekend, two are Vegtarian.:shock:

It is quite a coincidence as we know the male from one and female from the other but have never been in a 'food' situation with their partners.

I am hopeless with trying to make easyish veggie meals that are interesting and not the usual lasagne or pasta with no meat. Fish is a no for one of them.

Any ideas - please ;)

Mags - thank you so much for these links.

The veggie society has 'easy' against some of them and the bbc site has dinner party ideas. I feel less stressed already. :)

Try Melanzane Parmaggiano . . . essentially vegetable lasagne without meat or pasta . . . aubergines thinly sliced are used instead of the pasta sheets.

Always a fave :D

Do you know whether they also eat dairy, CM? Worth checking because of the cheese ......................

Dairy is fine - So cheesecake and fruit for dessert methinks!

My son and daughter are both vegetarian and have been for several years. How about using quorn mince or 'chicken' then you could do a spag bol or chilli, etc. One of my kids favs is quorn 'chicken' with mushroom sauce and savoury rice, easy peasy too! There are loads of vege alternatives now, vege roast, if you do a roast dinner, quorn fillets or how about curry, lots of choice using veggies or pulses.

Yola pinched my idea! - it's one of my most 'luxurious' veggie meals as it turns out to be very rich
Risotto is a nice meal everyone enjoys but you have the last minute preparation issues.
My last alternative is mushrooms in a rich sauce - stroganoff, or a rich tomato-based sauce. Use button mushrooms, whole, and the carnivores won't feel they're missing out as the mushies are remarkably meat-like.
