Omelette fillings

What are your favourite omelette fillings? I have found a new love for the above mentioned omelette easy and tasty so far keep returning to ham and cheese, and have found I enjoy one egg omelette's more then 2 the majority of the time the egg has to be large or Xlarge though.

So what are your favourite fillings?

How about smoked salmon and cream cheese with cracked black pepper for some thing a bit exotic. Use the low fat cheese and you have a low cal alternative too

Re: Omelette fillings

We tend to go for more of a frittata and throw anything in it. I think a lovely cheese omelette is my fav tho, with some b&b on the side. Light but satisfying.

Some clever folk do a cheese souffle omelette ....... more skill than me.

Totally agree with you it the cheese. I already add cracked
black pepper, but plan on branching out a little but think cheese and ham are firm favs so far. Will try out all your suggestions not a salmon fan but will try it in the omelette with cream cheese may be a winner.
