I would like to confirm what Emma said about using goose fat for the roasties and parsnips. I used it for the first time on Christmas Day and my guests were guinea pigs without knowing it!:lol: I didn't say a word about using it but the comments from them after were very complimentary.....the taste was so amazing, light, crispy and fluffy I would call it!
